What's Hap-pinning Wednesday: Pineapple Zucchini Bread

One of my favorite breads to bake is this {easy} Pineapple Zucchini Bread. Not only is it delicious in that not-too-sweet way, it's from my Nana's cookbook and I just adore making things from it and thinking about her making them, too. 

We love to eat this bread at all hours of the day. It's delicious warmed with some butter at breakfast; an accompaniment to the boys' lunches; or even a tasty after-supper dessert.

Pineapple Zucchini Bread 

Ingredients
3 eggs 
2 cups sugar 
1 cup vegetable oil
2 tsp. vanilla 
2 cups coarsely shredded, unpeeled zucchini 
1 can (8 1/4 oz.) crushed pineapple, drained well 
3 cups flour 
2 tsp. baking soda 
1 tsp. salt 
1/2 tsp. baking powder 
1 1/2 tsp. cinnamon 
3/4 tsp. nutmeg 
1 cup finely chopped walnuts (optional) 

Directions 
+ Preheat oven to 350*. 
+ Lightly grease two loaf pans, set aside. 
+ In a bowl, beat eggs until frothy. Beat in sugar, oil and vanilla and continue beating until mixture is thick and foamy. Stir in zucchini and pineapple. 
+ In another bowl, stir together dry ingredients and nuts (if using). Add zucchini mixture and stir just until all flour is moistened. 
+ Spoon batter into prepared pans. Bake 50-60 minutes or until done.

  2. Oh yum! I'll have to make this for Derek - I like certain kinds of breads and such but zucchini bread is his favorite!

  3. Oh man you just reached celebrity status with my husband! This is one of his favs and I remember making it from scratch before we were even engaged to try and impress him! haha Yum and yum!

  7. I have never heard of pineapple zucchini bread and this sounds absolutely amazing! I have tons of zucchini coming in my garden right now so this is definitely going on my baking list!!
