What's Hap-pinning Wednesday: Easy Recipe Files - Oven "Fried" Chicken

I don't know about you, but this time of the year always makes me long for comfort food. The chill in the air, the sky darkening by 6 p.m....I just want cozy. Buuuuut, it's also the start of a new year and I'm trying to be a bit better about what I eat. Enter this recipe for Oven "Fried" Chicken.

It's very easy {and clean up is a breeze} and even my toddler will eat it. I don't know about you, but I consider that a win.

Oven "Fried" Chicken

Ingredients
1/3 cup butter, melted
1 TBSP. Dijon mustard
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. black pepper
1 1/2 cups Ritz cracker crumbs (about 1.5 sleeves)
3/4 cup shredded Parmesan cheese
1 lb. (or about 3-4) chicken breasts, trimmed of fat

Directions
+ Preheat oven to 400* and line a baking sheet with foil. Spray foil with Pam.
+ In a bowl, stir together first five ingredients.
+ Combine Ritz cracker crumbs and Parmesan cheese in a shallow bowl.
+ Dip chicken in butter mixture, and then dredge in cracker crumb mixture.
+ Place on foil lined baking sheet and bake for 40 minutes.

I serve mine with a green vegetable {usually broccoli florets or peas} and smashed potatoes. Enjoy!

  10. This looks delicious! Mashed potatoes and broccoli are my go to sides. I make them more than I would like to admit because the kids almost always eat them. Now I will have a new chicken recipe to try with them. Thanks for sharing!
