Thoughts for Thursday: Nana's Blueberry-Banana Pie Recipe

Before this weekend, I had never attempted to make my Nana's blueberry-banana pie. I loved it growing up and the mere sight of the recipe makes my mouth water. But I knew it had a homemade crust and y'all, I'm just not that daring. But, Brandon was coming home from a week away, and I wanted to surprise him with a good homemade treat, so Nana's blueberry-banana pie it was. 

And y'all: I was shocked at how easy it was…homemade crust and all! Not only was it easy, it was absolutely delicious and was gone from our fridge in a mere three days. (Yikes!) It tasted just like I remember my Nana's tasting, so I knew I'd done it right. 

This is a yummy dessert to make for Easter lunch, too, which is definitely what I'll be doing this year! 


Nana's Blueberry-Banana Pie 

Ingredients
1 stick butter, softened
1 cup flour 
2 T. sugar
3 oz. cream cheese, softened 
1/2 cup sugar
1 (8 oz.) container Cool Whip
2-3 bananas, sliced thin
1 can blueberry pie filling 

Directions
1. Begin by making your crust: mix together 1 stick butter, 1 cup flour and 2 T. sugar in a bowl and press into a pie plate. Bake at 350* until it browns (about 20-30 minutes). Let cool completely. 
2. Line the cooled pie shell with the sliced bananas. (I do mine in a circular formation.) 
3. Then, mix together the cream cheese, sugar and Cool Whip. Pour this over the bananas. 
4. Top with the can of blueberry pie filling. 

*Note: You can eat this right away, but I like to let mine sit in the refrigerator overnight. It softens the crust and allows the flavors to meld together just so that it tastes divine!

  2. Look at you, fancy!! This actually does look like pie I would eat - there are not many I would say that about! Maybe THIS is what you could bring me instead once Camden is born ;) Pack that cooler full of ice and hit the road, sister!
