Thoughts for Thursday: Recent Pinterest Meals We've Tried {and Loved}

As y'all know, I love to cook. I'm by no means a gourmet chef, but getting into the kitchen is therapeutic for me after a long day...even though at the time, it can seem stressful and just like one more thing to do, it's nice to sit down to a home cooked meal. 

I'm always trying to new recipes {seriously, what did we do before Pinterest?} and bookmarking the ones we really loved. Since I can't photograph food to save my life, here are some of our recent Pinterest meals we've tried {and loved}: 

Cooking Classy's Garlic, Lemon and Parmesan Oven-Roasted Zucchini

I like to serve this as a side with either grilled chicken, a pork tenderloin or a steak. It's so easy and yummy...even Walker likes them! 




This is very much a meal-in-one, but I do like to serve it with a side of cous-cous. It couldn't be easier! 



It truly doesn't get any easier than this. One pan, a meal-in-one, low-carb and delicious for all. I consider that a win-win!



I know I talk about these far too often, but they're just so dang good! We seriously eat them probably once a week since I discovered them. They're easy, fresh and seriously, even Walker eats them. 



We love shrimp and grits, and being from the south, this is almost a staple. However, I don't like how much butter, cream cheese and other ingredients are in your typical shrimp and grits. Enter Cooking Light, subbing the most fattening ingredients for less, and you've got a wonderful, somewhat healthy version of the yummy staple we all love!



You can't not love this recipe. {Obviously I make a little batch without vodka before I serve to Walker.} It's so easy, tasty and if you have a bar cart like us, you can just grab the vodka and pop it in this recipe. It's yummy!

  1. That oven roasted salmon looks great; the fewer the pans the better! And you seriously have me thinking about those fish tacos they look delicious!
