Thoughts for Thursday: My Favorite Salad Recipes

When my sweet friend Laura texted me Monday asking me to do a recap of my favorite salad recipes, I happily obliged! What better to eat in the heat of summer than cool, refreshing, filling salads? Plus, they're easy to throw together and you don't even have to turn on an oven, meaning no hot kitchens! 

So, I'm linking up with Annie and Natalie to share my favorite salad recipes today! {I'm pretty picky about salads, too, so you know these are good!}

One of my most favorite salads is Peanut Butter and Peppers' Blueberry Peach Chicken Salad {here}. It's light, filling and I would never have thought to pair these ingredients together, but it's amazing! I'm usually not a second-day salad eater, but I devoured the leftovers the next day. 

This is truly a fall salad, but we eat it year-round in our house: Autumn Chopped Salad {here}. My grandmother introduced it to us when Walker was born, and I eat it quite often! I could drink the dressing. 

If you like Panera's Power Chicken Hummus Bowl, you will love this copycat recipe {here}! Click on that link to see my modifications to the original recipe, which is linked in there. This salad just screams "healthy."

For something with a LOT of protein, try The Garden Grazer's Quinoa Avocado Spinach Power Salad {here}. Brandon likes to eat this as an accompaniment to a grilled chicken or a lean cut of steak, but it's just fine for me to have as a main dish.

Another salad recipe Brandon likes a lot is The Skinny Fork's Skinny Grilled Buffalo Chicken Salad and Avocado Ranch {here}. This is a super filling salad, and it's very man-friendly! Another recipe where I could just drink the dressing! 

I absolutely crave Nordstrom CafĂ© Bistro's Cilantro Lime Shrimp Salad. Seriously, I wanted to drive the 15 miles down to Dallas to eat this salad when I was pregnant -- it is that good. Since I wasn't driving my pregnant butt to Dallas for. a. salad., I found a copycat recipe on Pinterest that is pretty darn close: Secretos de la Cocina's salad of the same name {here}. Brandon and I both love this salad and I especially like to make it in the spring and summer! 

Gimme Some Oven's Shrimp, Avocado and Roasted Corn Salad is to die for {here}! Instead of topping this with her buttermilk pesto dressing, I use a Simply Lemon vinaigrette and it's heavenly. This is another salad that Brandon just downs. Men + Bacon = Perfect Combo. 

On the pasta salad side of things, Sunset Magazine's Chicken, Corn and Tomato Pasta Salad {here} just screams summer! It's my favorite, favorite pasta salad recipe. It does take a lot of time to prep, but it's worth it and makes a ton! 

*Other salads I like to prepare that are super easy are a basic Greek Salad {just search Pinterest for a recipe -- follow me here!} and a Taco Salad, of which I use with ground turkey instead of ground beef.

  1. We love salads! And now that it's summer and the temps are getting up there these will probably be our go-tos for lunch and dinner most days. Thanks for sharing. Can't wait to try out a few.
