If you follow me on Instagram, you know that Brandon has taken to cooking lately…and I secretly - or perhaps not so secretly - love it. I've even created a hashtag for all of his yummy creations: #BrandonCooks. 

When I went back to work after Walker was born, we made a deal that he would cook one night a week. It's just helpful for me to not be in the kitchen four nights a week - especially after being up at 5 a.m., working a full eight hours and being Mommy - and the bonus is that I get to spend a full evening a week with Walker. 

Brandon's meals are so good and much fancier than the typical casseroles or pastas I tend to make. {Read: quick and easy.} Brandon couldn't even boil water when we met six years ago, so the fact that he's in there whipping up things I've never even attempted is so wonderful to me! 

I make my grocery lists on Friday and try to go to the store that evening or Saturday morning. I just ask Brandon to send me the list of ingredients he needs and I'll buy them at the store. He won't tell me what he's making until he plates it and brings it to me at the table, so it's kind of fun to have that surprise element to it, too! 

Anyway, without further adieu, here are a couple of his recent meals…

Sour Cream Chicken Enchiladas, Refried Black Beans, Mexican Rice and Avocados

Neither of us are picky eaters, so I've really enjoyed everything he has made so far! And I think I enjoy it more just because I'm not the one cooking. :)
