Menu Friday

Happy Friday and  Happy June 1, y'all! It's an absolutely gorgeous day in Dallas today -- love it! 

This weekend, I cooked a lot. This week? Not so much. We had so many leftovers and had dinner out with friends. And as much as I love to cook? It was kinda nice to not have to so much this week. 

Anyway, here's what we had to eat this week:

Saturday:
Homemade Fettuccine Alfredo + Caesar salad and garlic bread

Y'all. This was so bad, yet so good. I love The Pioneer Woman's recipes {as does Brandon}. We just gobbled this up on Saturday night. The only modification I made was that I used linguine as opposed to fettuccine since my grocery store doesn't have whole-wheat fettuccine. {So annoying!}


Sunday:

We really liked these enchiladas! They're lighter than most and have so much flavor. The only thing I would do differently next time is to use corn tortillas as opposed to flour. 


Monday:
My in-law's had their annual Memorial Day party, so I made Four Cheese Truffle Macaroni using this recipe as a guide, adding in a bit more cheese and some truffle oil. It was a major hit! 

My mother-in-law served barbeque and rolls, and people brought a ton of sides: macaroni, baked beans, potato salad, salads, fresh fruit and even more desserts: brownies, trifle, watermelon, cake, cupcakes, etc. 

Needless to say, we were insanely stuffed!


Tuesday:

This is one of our absolute favorite recipes...and it makes a lot. The only modifications I made this time was that I used whole tomatoes {and chopped them up with a wooden spoon as they cooked} because I accidentally bought them at the store as opposed to diced tomatoes. And honestly? I liked using the whole tomatoes more! 


Wednesday:
Leftovers 

Thursday:
We had dinner with friends at Fireside Pies. So yummy! We ordered the Cured Meats Sampler, Red Passion Sangria and Triple 'Roni Pizza. Y'all -- amazing! If you ever have a chance to go here, please do. We all loved it. 

Friday:
Today is my brother-in-law's 30th birthday, so we're having a surprise party for him at one of his favorite places, TopGolf. Brandon and I are going to get dinner and a drink beforehand, then enjoy the beautiful weather this evening with family and friends.
