Menu Friday

Happy Friday!

It's been a crazy busy week for me, so I apologize for being a bit absent on the blog this week. My client has a huge event going on today and tomorrow, and whew -- it's been a lot of planning! :) 

Anyway, Angelica is getting married tomorrow (!!!), so I'm working from home this morning and am driving to Austin this afternoon. (Speaking of, I really need to finish packing...) I can't wait to stop in Waco for some Common Grounds tomorrow night on my way back to Dallas! 

Moving on to Menu Friday.

Key West grilled chicken kebabs, steamed vegetables and herbed chicken cous cous 

This was very good and insanely easy. I did have to add more lime juice and soy sauce, however, and I left out the cilantro. We will definitely be making these again; they're great for summer! 

Chicken Tamale Casserole, black beans and Spanish rice 

As I've mentioned before, this is a staple in our house and we both just love it. It's very filling, and hello, it's Cooking Light

I was busy working and making a meal for my step-cousin and step-cousin-in-law, so Brandon grilled salmon and topped it with an easy sauce: butter, white wine and dill. {I love that my husband cooks!} 

We'd eaten some appetizers, so I didn't serve anything to go along with the salmon. 

My step-cousin and step-cousin-in-law said they'd take a "rain check" on my meal (that's another story for another day...) so I gave the meal that I had cooked and schlepped to work away to our office secretary and then we ate the second chicken spaghetti I had cooked, along with a salad and my favorite Sister Schubert's dinner rolls

...I'd also made them a buttermilk pie {and doubled the recipe so we'd have one}, so I freezed the one that I made for them {we'll take it to my in-law's on Mother's Day} and we each had a slice of the one I made for us. 

Buttermilk pie is my absolute fave and seriously, it's so easy. It's not too sweet -- which is exactly why I love it -- and it reminds me of my grandmother. Let me know if you want the recipe; it's a great standby in our house and I've made it for numerous gatherings: friends' dinners at our house, Easter, New Year's, etc. 

I need to jump on a client call and then get crackin' on packin' (and finishing folding clothes), so happy weekend!
