Menu Friday

Happy Friday!

It's a busy day in client land, so I'm going to have to make this quick.

Pre-made Chicken Cordon Bleu {from Tom Thumb}, brown rice and broccolini

This was quick and easy, and my broccolini is my new obsession.

These chicken were seriously on steroids so we halved them and ate the rest for leftovers.


We loved this! It made a ton, so be prepared to eat it for leftovers.

Modifications: I only added in a pinch of red pepper because we're weenies and don't like spicy food. Also, I used whole-wheat linguine.

Meatloaf, peas and crescent rolls

This recipe comes from Mozell, my grandparents' housekeeper of 20+ years. It's the only meatloaf I will eat...and it's yummy.

It's 2 lbs. ground beef, one package Lipton Onion Soup Mix, two eggs and a cup of breadcrumbs. But, the sauce is what makes it: ketchup, nutmeg, dry mustard and brown sugar. Mmm!

Real Simple's Creamy Spinach Enchiladas, black beans and Spanish rice

These were surprisingly easy and Brandon really liked them {as did I}. They were so pretty and colorful; they honestly looked like something you'd order at Mi Cocina or something. :)

Modifications: I used shallots instead of scallions, and used purple cabbage to make it pretty {and a little crunchy}.


Tonight we're holing up at home with a glass of wine and my Aunt Katherine's Spaghetti Pie.
