Menu Friday

Happy Friday!

I've been so busy today, so I'm even happier that Friday is here. Whew, I need the weekend!

I was off work, so I had time to marinate steaks all day. I've professed my love of Stubb's Beef Marinade to y'all; seriously, you've got to try it.

To go along with the steaks, I made corn pudding and bought a loaf of fresh sourdough bread.

We went out to eat for my birthday. No way was I cooking that day!

My mother-in-law got sick {and we were supposed to have "linner" with them} so I took my chance at our first Easter lunch. Unfortunately, she called around 2 p.m. on Saturday {and I'd already been to the store the day before}, so I didn't have time to go to the grocery store again. Sooo, I just cooked what was on our weekly menu for Tuesday: Cooking Light's slow-cooker beef stroganoff; we also had leftover corn pudding and crescent rolls.

And while it wasn't my Nana's ham, layered salad, mashed potatoes and other yummy Easter goodies, it was pretty darn good and I really felt like a grown up. :)

I also made my Nana's buttermilk pie.

I had the ingredients because that's what I was originally going to take to my in-law's on Easter. It's so ridiculously easy and tastes like it's insanely hard. Chances are, you probably have all the ingredients {save for the buttermilk} at home right now.

We enjoyed it over coffee on Sunday afternoon.


This was SO easy and we both loved it! The only modification I had was that I used purple cabbage as opposed to green.


Bow Tie Fiesta and garlic bread

This was actually better than I thought it was going to be. And it made a LOT. Brandon described it as a "Mexican pizza pasta." I totally disagree, but whatever floats his boat. Ha!

{However, Erin at Blue Eyed Bride says she takes it to new mommies. I wouldn't recommend it for nursing moms because it was a tad bit spicy. And we all know how that will turn out! Hmm, I might do a post on what meals I like to take to new mommies and/or sick people...}

We had Bow Tie Fiesta leftovers. I told you it made a lot...!

Tonight we're going over to my brother- and sister-in-law's house to celebrate my father-in-law's 60th birthday. The entire family is gathering and my mother-in-law is grilling steaks and chicken and making lots of sides. I'm in charge of the that. ;)
