Menu Friday

Happy Friday! As you're reading this, we're en-route to my parents' and I couldn't be more excited!

With last week's messed up eating schedule, I more than made up for it this week. And not kidding, we both loved every single meal this week. Winning!
Behold, Menu Friday...


These were so yummy; Brandon ate three! I could only handle one. They're filling!

Modifications: I just made my own guacamole with my own special recipe {with store-bought pico de gallo instead of chopped tomatoes & onions...much easier} and added some lime juice, cumin and extra chipotle chile powder to the chicken because it was a bit dry. But it made a lot of chicken, so I saved it for a recipe later in the week!


For some reason, my local Tom Thumb doesn't sell whole-wheat fettuccine pasta. They sell regular pasta, but I only purchase whole-wheat. So really, this was more shrimp fettuccine linguine. But it was very good, very creamy and makes me wonder what goes in "actual" fettuccine alfredo...

Steak, mashed potatoes and asparagus

No link here, folks. I buy the steak that's on sale at the grocery store {this was ribeye, but we prefer top sirloin for home grilling} and marinate it in Stubb's Beef Marinade all day.

Y'all. I'm going to go all Texan on you and tell you that I refuse to use any other marinade than Austin's own Stubb's. It is not too salty (like a lot of marinades) and gives just the right anount of kick. And bonus? It's usually around $3 a bottle at the store.


Remember me telling you about that leftover chicken? It made these so simple to make!

Modifications: I used a corn/whole-wheat hybrid tortilla. Mine were more burrito-sized, but tasted just like good ol' frozen taquitos {that I ate too much in college because they were cheap and now I can't stand the sight of them}. They made a lot -- two could fill up Brandon -- so we had plenty of leftovers.

And bonus? There was more filling than tortillas, so I brought it to work, crunched some tortilla chips over it, topped it with sour cream and salsa and wa-la! Instant lunch.

Bowtie "Lasagna" and salad

This is a staple in our house. It's so easy and so yummy...and makes a ton. And the best part? It's a "use what you have"-type dish, which I love.

Modifications: I always add more Italian Seasoning than the recipe calls for. Just eyeball it to your liking.

You guessed it! Leftovers.


I was packing and cleaning all night last night {I loathe leaving/coming home to a dirty house!}, so I wanted a quick, yummy dish that would allow me to clean and pack while it was baking. Enter this dish. It's got just the right amount of spice -- but not too overwhelming -- and doesn't taste "light" at all.

  1. Yum! We had the chilaquiles on Wednesday! It's one of Tyler's favorites :) and last night I made the chili you posted a few weeks back. It's a family favorite.
