Menus, TV shows and Friday randomness

Happy Friday! We made it!

If there's one thing I love, it's food. And healthy food that's still yummy? Bonus! I love when people post recipes on their blog, because it gives me a chance to find new ones. And again, when they're healthy? Double bonus!

Kate at Elefantitas Alegres does a "Menu Sunday" of the food they had that week. Since I go to the grocery store on Saturday mornings, I thought I'd give you a little glimpse into this past week's "menu." And if you're wondering, I use this handy weekly meal planner.


These were super easy to make and so yummy! I just added a tiny dollop of light sour cream onto each serving. Brandon kept saying, "This is called chile-what?"

Again, super easy, and Bethenny's recipes never disappoint. I try to make a meatless meal once a week, and this is one that Brandon eats and never complains about it being meatless. Yes, truffle oil is expensive, but it lasts you for-EV-er. (Sandlot, anyone? Bueller?) I personally use the La Tourangelle Infused White Truffle Oil, which is available at Tom Thumb and other places, I'm sure.


Wednesdays are always leftover nights for us, which I love because I don't have to cook! That's the night I typically clean the bathrooms, dust and pick up around the house a bit...because I certainly don't want to clean the bathrooms on the weekend.

Last night we had Cooking Light's Slow-Cooker Beef Stroganoff served over whole-wheat egg noodles. I didn't use a fresh onion (just because it was 6:30 a.m. when I was getting this in the slow-cooker and I did not want to be chopping an onion at the awful hour), but I did use dried onions in a can...tasted just fine to me! I also added a bit more dill {because we love dill} and next time would cut down the Dijon mustard to only 1 Tbsp.


Tonight we're having Bethenny's Shrimp Scampi over whole-wheat pasta. {Can you tell we love pasta?!}

One thing hubs and I love is eating in on the weekends. It really does save so much money by not eating out, and it's so much better for you, too!


Moving on from the menus and food, last night after supper, we curled up with a glass of wine {Cupcake Cabernet, if you're wondering} and a toasty fire to watch our favorite Thursday night show, Grey's Anatomy. (Yes, I've been a loyal watcher since college!)


Our other favorite shows {and when I say "our," I pretty much mean "my and Brandon watches them because I make him") include: The Firm, Dateline, The Bachelor, Parenthood, and Modern Family.

Shows that I personally watch (that Brandon absolutely refuses to even be in the room for) are: Gossip Girl, Teen Mom {yes, I support that trash} and any of the Real Housewives franchises.

I'm so excited that my office is closing at 3 p.m. today for Monday's MLK Day holiday. It's a three-day weekend for me!

PS: After doing some research for a friend's wedding gift, did you know it's proper etiquette to have the bride's initial first in a monogram, per Peggy Post? Guess Brandon and I never really have to worry about that! Ha! {Our monogram is BWB.}

  1. It is the PROPER thing to do but when your proper monogram would be STD you consider breaking proper etiquette! :)
