I love The Pioneer Woman. And I love anything that bakes in the oven for 20 minutes, allowing me to fold clothes and pick up around the house while it's cooking.

So, last night I veered away from our typical Cooking Light recipes and made P-Dub's Sour Cream Noodle Bake.

Ummm....two words: in.love.

I typically am not a fan of cottage cheese (which this recipe calls for) but this was heaven in my mouth. And hubs liked it, so score one for the SCNB. I'll be making again.

I did make a few subsitutions:
  • whole wheat noodles as opposed to egg noodles
  • light sour cream
  • 93/7 ground beef
  • and I did not grate my own cheese (I don't have time for that!)
But seriously? We loved it. And I pretty much feel like a drug addict craving for one more hit...of the Sour Cream Noodle Bake. Do me a favor and make this next week. It's easy, yummy and your husband/boyfriend/fiance will thank you.
